Lenten wholegrain apple pancakes

Happy New Year, my dear friends! Wishing you all love, happiness, laughter, more time with your family, goals to be achieved, and obstacles to be removed, and of course lots of delicious food and unforgettable cooking experiments! And today we will cook egg-free, dairy-free, whole grain apple pancakes.

For Orthodox Christians, a Nativity Lent is coming to an end and on Sunday we all greet each other with “Christ is born! Glorify Him!” and listen to beautiful Christmas carols at church and finally get together with friends and family to celebrate.

Meanwhile, let’s enjoy our breakfast with some light and pretty outstanding Lenten wholegrain apple pancakes. The recipe suggests to mix and match different flours such as wholegrain, rye even buckwheat.  I tried a mix of wholegrain and plain all-purpose flour first and the result was absolutely delicious! Next time I will definitely try rye and I strongly recommend you guys try this recipe!  Eggs and dairy-free Lenten pancakes recipe as usual and we do not need those pancake mixes do we? We have 10 minutes for a healthy breakfast prep! Let’s do them, they are fantastic!

Lenten wholegrain apple pancakes

Ingredients

  • 1 cup almond milk or apple cider
  • 2 medium apples
  • 1 tbsp sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 tbsp olive oil
  • 1/2 cup wholegrain flour
  • 1/2 cup all-purpose flour ((you can try different flours like rye or buckwheat, mix and match for the variety of flavors)

Instructions

  • Prepare your ingredients.
    Ingredients for lenten apple pancakes: Wholegrain flour, all purpose flour, almond milk, apples, baking soda, olive oil, salt and sugar arranged on a cutting board
  • Wash, peel and dice apples.

  • Mix all dry ingredients. Sift flour with salt and baking powder, mix in sugar.
  • Add almond milk to the dry ingredients, mix in apples and olive oil. Leave for 10 min.
  • Preheat your pan over medium heat and pour apple pancake dough into round forms. Turn the pancake over when bubbles are generated (see picture).

  • Fry pancakes over medium heat for 5 min on each side.
  • Serve hot, enjoy with honey. Bon Appétit!
