Quick and yummy Vegetarian/Vegan burger

Hello everyone,

Let’s have our meatless Friday and how about some burger today?  Veggie burger of course.  They taste so good that can satisfy your cravings for a real burger without an effort! And the greatest part is that these veggie burgers contain ONLY veggies…

Let me explain.  I used to buy veggie burgers in a frozen food section of the grocery store, thinking that it is totally fine to do so once in a while when you are in “I’m so busy I have no time to cook” phase.  There are lots of different brands and variations of veggie burgers and I was completely happy having them for dinner (and even thinking that I eat healthy) once in a while until one day I turned the box to check the ingredients and to make sure that there are no eggs in them.  So I turned the box to look at the ingredients list, expecting to see veggies and maybe some spices and some starch to keep them together… What I saw was a long list of periodic table components and I didn’t like that at all.  It was also a period in my life when I had to stay away from soy due to some allergy issues and there are hardly any products out there that do not contain soy lecithin (those of you who have soy allergies understand me).

So when I saw a periodic table I put the box back on a shelf and decided that I’m good enough cook to make veggie burgers by myself and I’m not feeding my family periodic table components.  The result exceeded the bravest expectations!  I found this recipe on the Jamie Oliver website and am very grateful for it. These burgers are fulfilling, yummy and very healthy.  The best thing is that you are in control what this super healthy fast food contains. Your veggie burgers contain veggies – how awesome is that?

Veggie Burger

Quick and yummy Vegetarian burger

Ingredients

  • 200 gr frozen broad beans
  • 200 gr frozen peas
  • 200 gr frozen corn
  • 1/2 bunch cilantro
  • 100 gr nuts (any that you like)
  • 1/2 tsp ground cumin
  • 1 tsp cayenne pepper
  • 1 tbsp sesame seeds
  • 75 gr flour
  • 2 tbsp olive oil

Instructions

  • Gather your ingredients. Defrost frozen veggies in a colander under running cold water for 5 min.

  • Put your veggies in a food processor. Add spices, minced coriander, flour, and nuts. Combine everything together in a food processor using pulse regime in order to maintain chunky consistency.

  • Form four patties on a dusted board and put them in a freezer for 10 min to get firm.

  • Add olive oil to the pan and fry for 5 min on each side on a medium-high. When ready turn heat to high to get a nice golden crust on your yummy burger.
  • Serve on a toasted bun with hummus, BBQ sauce, and arugula. This combination tastes delicious but you are welcome to create your own use any salad you like add experiment with different condiments.

Notes

You can use this burger as a main dish on a bed of spinach. There are countless combo opportunities.

  1. Is the corn a “must” ingredient? I have a corn allergy…would replacing with 100g more each of the beans/peas work?

    1. Hi Carol,
      Please go ahead and replace corn with chickpeas or white beans. We apologize for a late response, we had some technical issues.Stay tuned as we are going to cook a variety of vegan patties, cakes, and burgers. Keep in mind the proportion as we want burger shape, not vegetable mixture which often happens when we get sidetracked and add a little extra here and there. Freezing burgers as stated in a recipe helps tremendously to keep the shape we want.
