My mother used to cook walnut patties when I was a kid and the favorite game was to ask Dad if he likes the cutlets. We would giggle together secretly after receiving the answer “yes, they are delicious” 🙂 You see, my dad is a very devoted chicken/pork cutlets lover and he did not realize that there was no meat at all in those cutlets. The fact that he did not taste the difference proves the magic of this recipe.

Where did walnut patties come from?

When the majority of people were struggling to feed the family due to the loss of their savings after their accounts were taken over by the fraud government. “Need makes the old wife trot”. Ingredients

  • 2 big potatoes
  • 1/2 loaf stale bread (not toast bread!!!) (bread should be completely dry and hard as wood. Its necessary!)
  • 2 cups walnuts
  • 1 yellow onion
  • 3 cloves garlic
  • 2 tbsp ground flax seeds
  • 3 tbsp water
  • 1 tbsp smoked paprika
  • 1 tbsp ground fennel seeds
  • 1 tsp smoked salt
  • 1 tsp sea salt
  • 1 tsp ground black pepper

Instructions

  • Prepare your ingredients
    Dry, stale old bread, two potatoes, bowl of walnuts, one onion, two cloves of garlic, ground flax seeds on a cutting board
  • Put stale bread in a bowl and cover with water. Depending on the solidity of the bread amount of time it should spend in water vary. Therefore, check it every 5 min and make your decision. Bread is ready when you can squeeze it easily. Peel, cut into chunks, cover with water, and boil potatoes until soft. When potatoes are ready, mash them. Peel and dice your onion and cook it with 1 tbsp. olive oil on medium heat until soft and transparent. Ground walnuts with the help of a food processor or meat grinder. Combine squeezed bread, mashed potatoes, cooked onion, ground walnuts, squeezed garlic, and spices in a bowl. Mix until the mixture becomes even.

  • Moisten your hands with cold water and form patties.

  • Cook on a high-medium heat for 5 min on each side or until the golden crust forms.

  1. Thank you for this recipe, it is delicious!

    To make the mashed potatoes, I used 1 1/2 cups instant potato flakes + the approp. amount of water. Also, I used only 2/3 of the smoked paprika and fennel.

    We enjoyed it with sauteed kale. As we ate, we listened to Ukrainian music and I related to the kids what happened in Ukraine in the 90’s, and of course what is going on right now. We are praying for the people in Ukraine.

    Looking forward to having this again.
