Mouthwatering Vegetarian Black Bean Burgers

 

Hello everyone,

The 4th of July is around the corner and its hard to imagine celebrating this holiday without grilling. The smell of open fire, laugh, and jokes, ice-cold drinks, fresh fruits, kids getting away with not listening, parents letting themselves just be and just enjoy. That is the recipe for an incredible 4th of July celebration menu.

Those who are fasting please rejoice! Although we are not allowed fish on Wednesdays, there are still plenty of mouthwatering recipes of seafood and grilled veggies that will make you feel happy, full and not left out of the mainstream. We need to be smart here and make our seafood feast so scrumptious that even non-fasting guest in a crowd should stay satisfied.

Grilling is not always about the meat. Challenge accepted!

How about some Juicy Vegetarian Black Bean Burger?

This guy is the phenomenal alternative to meat burgers because it has all protein power to keep you full and satisfied, it has the black color that reminds you a real burger and it tastes like one with secret ingredient spices and BBQ sauce on top.

There are limitless varieties to add some different hints of flavors here are my favorites. If you are BBQ sauce lover then cover one half of the grilled bun with hummus add sizzling vegetarian burger sprinkle with olive oil, add some spoonful of BBQ sauce and add some greens of your choice. I like thinly sliced cucumbers but spring mix or spinach and even arugula work here as well.

If you are up for some Mexican flavors, cover one half of the grilled bun with sliced avocado, add sizzling black bean burger sprinkle with olive oil, add some salsa and the greens of your choice. You might have some grilled corn on a side.

Prep your patties a day ahead, keep them in a freezer and it will take you a couple of mins to pull off your fabulous 4th of July Lenten Feast.

If Vegetarian Burger is not enough for you, grill shrimp skewers. How much time will it take your guest to consume them? Two minutes? A little bit more? You might say I want grilled seafood though! Okay okay. Here is the recipe. Grill your shrimps with a pinch of salt and pepper and transform them into an Asian Refreshment Watermelon Shrimp Salad drizzled with zingy Asian dressing.

After eating this incredible meal, you will become a pinch happier, I promise!

Black Bean Burgers

Ingredients

  • 800 gr cooked black beans 2 *400 gr tins
  • 1 red onion
  • 1 fresh chili
  • 1/2 bunch fresh corriander
  • 1 lime
  • 4 tbsp dry oatmeal
  • 2 tbsp peanuts
  • 1/2 tsp ground corriander
  • 1 tsp ground cumin
  • extra virgin olive oil
  • flour for dusting
  • 6 hamburger buns
  • greens
  • salsa, hummus, bbq sauce to taste

Instructions

  • Prepare your ingredients
  • Add nuts and oatmeal to the food processor together with spices, use pulse regime to combine everything together. Dice and chop chili. Peel and chop onion. Chop coriander leaves together with stalks. Zest lime.
  • Drain black beans and add to the food processor together with chili, onion, coriander, lime zest and 1 tbs of olive oil. Pulse everything to combine.
  • Fold 6 patties on the floured surface. Put in a freezer for at least 30 min.
  • Fry on a medium-high heat for 5 min on each side. Serve with hummus and BBQ sauce, greens of your choice or avocado slices, salsa, and a green salad. Bon Appétit!
