Our beautiful autumn day is coming to an end and keeping the same healthy mode that we started in the morning let’s make this protein-packed beans stew for dinner which is so yummy and rich with spices that you will forget that it has no meat in it at all!

Heartwarming Vegetarian Chili Con Carne

Ingredients

  • 2 medium onions
  • 4 cloves garlic
  • 1 long chili pepper
  • 2 tbsp olive oil
  • 2 tbsp ground cumin
  • 2 tbsp ground coriander
  • 2 tbsp smoked paprika
  • 2 tbsp dried oregano
  • 1 tsp ground cinnamon
  • 1 tsp whole nutmeg grated
  • 2 tbsp ketchup
  • 250 gr dried green lentils
  • 250 gr dried red lentils
  • 800 gr red kidney beans (or any beans you like)
  • 800 gr black beans (or any beans you like)
  • 1.2 liters vegetable stock (organic preferably)

Instructions

  • Gather all the ingredients. Perfect start. Praise yourself for having all the ingredients bought beforehand. Not perfect start. Get upset that you are missing some ingredient.(see below) Always perfect start. Get creative and substitute one ingredient with something similar or just skip it its not the end of the world. Recipe is not set in stone, get creative and don't be afraid to experiment! (Applicable to 1 or 2 missing ingredients otherwise you will go far from the original recipe and the outcome will be something definitely incredible but not the exact recipe we are doing here)

  • Peel and chop the onion, garlic and chili pepper. Heat the oil on a medium heat in the heavy bottomed cast iron pot, add ingredients and fry until onion becomes soft and transparent for 5 min.

  • Add spices, dried herbs, oregano, and ketchup. Fry for 2 min.

  • Add lentils beans and tomatoes. Stir in well and add vegetable broth.

  • Bring to a boil, cover with lid, reduce hit to medium-low. Boil for an hour or until thickened.Stir every 20 min. If not thickened after an hour, open the lid, raise heat to medium high, stir frequently to quickly bring to a desired consistency.

  • Serve over white rice scattered with cilantro and a wedge of lime.
