Think warm yummy creamy bowl of soup in your hands, warm blanket and your favorite comedy. Are you in? Read till the end and I will give you the secret weapon how to get over that thing that caused your autumn blues.

When the sky is grey, the wind is piercing you through and the rain speeds you up to hide in the warmth of your cozy home and snug under your favorite blanket with a cup of tea or a bowl of your favorite autumn soup. I am going to give you a unique recipe that reflects the classic basic recipe of the lentil soup with a few important flavor twists. The classic lentil soup recipe is the ratio of water and lentils 1:4 and the aromatic vegetable base of onions, garlic, carrots, and celery. Straightforward, isn’t it? What differs this recipe from the rest of existing ones is a couple of pinches of incredible spices that move it to a completely different level of taste. The cooking is all about it. I feel like adding some chili pepper, cumin, smoked paprika, and coriander. These four spices will transform your blend lentil soup into a delicious restaurant style masterpiece and make both your body and your mind happy!

Spicy red lentil soup

Ingredients

  • 1 onion
  • 1 carrot
  • 2 celery sticks
  • 1 cup red lentils
  • 4 cups water
  • 1/2 lemon juiced
  • 1 tsp. ground coriander
  • 1 tsp. smoked paprika
  • 1/2 tsp. ground cumin
  • 1/2 tsp. salt (optional)
  • 1/2 tsp ground black pepper (optional)
  • 2 tbsp olive oil

Instructions

  • Prepare your ingredients
  • Peel and dice onions and carrots, wash and dice celery sticks. Fry onions on a medium heat for 8 min or until translucent, add carrots, celery fry for 2 more minutes
  • Add lentils, water, spices and bring to boil. When the soup starts boiling reduce heat to simmer, stir everything thoroughly, cover with a lid and cook for 25 min. When ready take off the stow and puree with puree mixer attachment to reach smooth and silky texture.

  • Add lemon juice and mix well. Serve hot. Bon Appétit!
