Cod poached in a basil-lemon sauce

Hello everyone,

This recipe is an ace in my sleeve every time I am inviting guests over during lent season. Applauses and compliments are countless, the dish tastes like you’re experiencing a chef masterpiece in a pricey restaurant and the time invested is the same as making a sandwich! I’m serious!

Think juicy tender flaky cod with a subtle ocean taste inside coated with thick lemony sauce with a distinct basil flavor and a little spicy hint of mustard and garlic. You just have to make it and it will become one of your favorite festive fish dishes.

Cod poached in a basil-lemon sauce

Ingredients

  • 2 lb cod fillets ((6 pieces))
  • 4 tbsp vegan butter
  • 1 bunch bacon
  • 1 tbsp Dijon mustard
  • 1/2 lemon
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 4 tbsp flour

Instructions

  • Prepare your ingredients.
    Cod fillet, basil leaves, Dijon mustard, salt, vegan butter, flour, half of lemon, garlic, salt and pepper
  • Mix vegan butter (room temperature), lemon juice, mustard, chopped basil and olive oil to make creamy consistency paste. Set aside

  • Heat up the pan with an olive oil over a medium heat.
  • Dust your fish fillet with flour.

  • Fry for 4 min on one side.

  • Turn to the other side, brush with basil butter and fry for 4 more minutes.

  • With cod, it's easy to check when it's cooked thoroughly. You should be able to see a flaked fillet when you lift one end of it.
