Put water in a large saucepan and bring to a boil. Reduce heat to a simmer. Add the cinnamon stick, peeled and sliced ginger root, elderberries. Brew for 30 minutes.
Strain and add honey, stir until melted (if you want to keep the elixir for several months add brandy, it helps to preserve it). Allow to cool. Refrigerate for several weeks. Bon Appétit!
