Ingredients

  • 1 butternut squash
  • 8 oz dried udon or soba noodles
  • 2 tbsp. vegetable oil
  • 8 oz shiitake mushrooms
  • 2 cups fresh spinach leaves ((optional))
  • 4 spring onions
  • 1/3 cup reduced sodium soy sauce
  • 1/3 cup water
  • 1 tbsp. grated fresh ginger
  • 1 tbsp. sriracha sauce
  • 1 tbsp. honey

Instructions

  • Prepare your ingredients
    Dry udon noodles, butternut squash, shiitake mushrooms, spinach leaves, soy sauce, and ginger
  • Put a pot with water to boil. Preheat oven to 425F. Deseed, peel and cut butternut squash into 1-inch cubes. Wash and cut mushrooms into the same size as butternut squash. Cook noodles to package instructions, set aside. Add butternut squash to a tray, drizzle with olive oil, bake for 15 min. Add mushrooms, spring onions (cut into 3iinch sticks) and bake 5 more min.

  • In a small bowl whisk together soy sauce, honey, sriracha, water, and ginger. Mix baked veggies in a bowl with sauce and (spinach leaves if using). Serve over noodles. Bon Appétit!
